am I getting enough Calories?

So, for the past few months I have been hovering around the same body fat % and around the same weight. I think I may have just figured it out...is it possible that I'm not getting enough calories (and enough nutrition overall) and thus have put my body into a "save everything" mode?
for example this is what I've eaten so far today ~ means I've mearly guessed or approximated calories...I could very well be wrong (if I am, let me know!)
breakfast:
2 eggs (~75 calories)
piece of wheat toast (110 cal)
snack between classes:
swallow of chia seed dring (total day's use of chia seeds about 100 cal - a bit less than 1/3 cup)
chocolate chip granola bar (210 cal) -- not super healthy either but its what I grabbed
lunch:
homemade veggie soup ~220 (at best)
apple sauce (130 cal)
about 5 baby carrots (40 cal?)
snack between classes:
more chia seed drink
raw revolution bar (260 cal)
dinner:
large grilled red pepper (seasoned with olive oil - minimal amounts) ~80 cal
small chicken breast 110 cal
post dinner snack:
bowl of air popped popcorn with olive oil (the one food I absolutely love) ~200 cal
that brings the days total to: 1535 calories.
That doesn't seem like a lot. And this isn't that different from what I eat every day. My breakfast can vary between a bowl of Quaker cereal (I'd say about 250 calories w/milk) or my shake (1/3 chia seeds, 1/3 cup mixed berries, 5 frozen strawberries, dab of protein powder, almond milk which all comes to about 440 calories give or take a few). It seems like I rarely get over 2500 calories a day. And honestly, probably a solid chunk of my calories is from stuff that is not ideal (aka chocolate chip granola bar... haha)
Today I: ran a mile, rock climbed for 2 hours (class) and did the "Monday" workout for the advanced-intermediate scooby workout. if it matters.
I'm 23, 176lbs, about 21% body fat. I'm trying to do the "lose weight but still gain some muscle" thing.
thoughts?

also, might be worth noting i typically have a solid amount of baby carrots and to a lesser degree celery and apples (gala) though my supply was basically gone today so I didn't eat any. and I don't have a bowl of popcorn everyday haha

I'm guessing you're a male? At the top of my head I'd say you aren't eating enough calories. You know scooby has a calorie calculator where you type in your stats and your goals and it tells you an *estimation* of how many calories you should be getting.
