Is there any particularly wrong with eating the same kind of meal I would have for lunch for breakfast, as in meat/fish+veggies,
providing I can get the same kind of fibre/carbs that i normally would from a 'regular' breakfast?

These kinds of things are far to minuscule to consider worrying about... The biggest thing that matters is the calories and macronutrient ratios/ micronutrients consumed for the whole day. You do not need specific ratio's for each meal, nor do you need to worry about eating chicken and veg for breakfast. Focus on the whole day.

    It's just a matter of variety, eat what you want at each meal. Just get a variety of foods so you cover all the nutrient bases and don't get bored.

    Doesn't really matter. At the end of the day 1g of carbs = 1 g of carbs.
