-500gr chicken liver
-2 cups of water
-Parsley
-1 medium celery root
-Black pepper
-1 tsp of desiccated coconuts
-2 tsp of mustard seed
-1 tsp of dried cloves (Ground)
-A clove of garlic
-One medium onion
-300gr homemade pepper paste (It is easy - Boil red hot chilli until soft and blend) or another sauce, such as salsa or Tabasco.
-Vinegar (Don't add this if you're using a sauce like Tabasco which already contains vinegar)
-3 big walnuts
-Half glass of wine (Optional)
Roast chicken liver for 5 minutes along with the chopped onion, black pepper and garlic, in another pan, boil the grated celery root and parsley. Mix them together and mash it all. As you mash, you can add a bit of wine to make it more fluid. Add coconuts, mustard, dried cloves, pepper paste (Or your sauce), vinegar, walnuts. This is served cold. Herbs are my choices. You can be creative, or simplistic, according to your taste.
