This recipe likely isn't for everyone, but if it fits in your macros - it is a treat that is worth a try.
( I follow a ketogenic diet, and this fits in my daily macros *if* I watch my carbs. )

Total Calories: ~700  (You've been warned)

Calorie Breakdown:
34g Carbohydrate (19%) (16g Fiber, 18g net)
60g Fat (78%)
23g Protein (3%)

In time, I will likely tweak it further.  Things that I might alter:
- The coconut oil is the single biggest source of calories, may lower content.
- And the granulated Splenda the biggest source of net carbs - alternate sweeteners (Erythritol, or liquid Splenda) might help


3 tablespoons Almond Flour
1 tablespoons Coconut Flour
1/4 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons granulated splenda
1/2 scoop - Cocoa flavored Whey Powder
1 large egg
2 tablespoons cocoa powder
4 tablespoons milk (thought about using using cream)
3 tablespoons coconut oil
1 teaspoon vanilla extract


Mix ingredients in a large microwave safe coffee mug
Microwave on high for 30 seconds (to ensure that coconut oil is melted)
Stir Ingredients
Microwave on high for 90 seconds

    This reminds me of a recipe leanbodylifestyle did on youtube for a coffee mug, microwave protein brownie. I haven't tried it, but it looked like it came out well. You might want to compare ingredients and mix and match to find what tastes best to you.

    Why?  Nothing wrong with fats, or calories for that matter.  Fit it inside your macros and enjoy it.

    A person can lose weight and include this, it's just going to be less filling than 700 calories of chicken breast and broccoli. Probably much better at satiating a craving though.

    Probably much better at satiating a craving though.

    That it does.  
    It had been nearly a year since I'd had anything resembling cake.
    This managed to do it while keeping within my daily carb constraints.


    It is also something that I can keep in mind for special occasions (such as my kids birthday parties)....

    Next time I make it, I'll probably see if it could be made in silicon muffin cups.
    I expect that it could be split between 3 or 4...
    and a smaller portion would be even easier to fit within someone's macros.

    I ate 3,220 calories today, but that doesn't make me fat.  One of my meals was 1500 calories.

    Couldn't decide what to have for breakfast this morning.
    Made some cinnamon flax muffins yesterday - and noted some similarities in the recipes.
    Decided to play with tweaking these a bit more

    The change to a liquid sweetener helped to bring the carb count down quite a bit,
    and the reduction in oil brought the calorie count down.
    It made 4 muffins - I'll test to see how one stores for a day.

    3 tablespoons Almond Flour
    1 tablespoons Coconut Flour
    1/2 teaspoon baking powder
    1/8 teaspoon salt
    2 tablespoons cocoa powder
    1 tablespoon Vital Wheat Gluten (possible substitution: 1/2 scoop - Whey Powder)
    2 tablespoons Davinci Sugar Free Vanilla Syrup
    1 large egg
    3 tablespoons milk (possible substitution: cream or coconut milk)
    1 tablespoon coconut oil


    Calorie Breakdown (full recipe):
    total calories: 400
    18g Carbohydrate (18%) (9g Fiber, 9g net)
    30g Fat (68%)
    20g Protein (14%)


    Makes 4 muffins.
    Calorie Breakdown (Per Muffin):
    total calories: 100
    4.5g Carbohydrate (18%) (2.3g Fiber, 2.3g net)
    7.5g Fat (68%)
    5g Protein (14%)


    Texture wise - it was a bit lighter than the original, which was a good thing to me.
    Hopefully the reduction in calories will make it more palatable to some. ;-)
