Experiment gone well, whole family loves these.

Ingredients:
3 cups kashi
1/2 cup pureed carrots
4 egg whites
1 cup skim milk
1 cup sweetener
1/2 cup ground flax

Optional goodies:
1/2 cup chopped walnuts
1/3 cup dried fruit
1 cup berries

Mix all this together in a bowl, pour into a 9x13 glass pan, bake at 350 degrees for 40 minutes, let cool for 20 minutes, cut and enjoy.

Without optional goodies the batch will give you about these values for macros
840 kcals 74g protein 22g fat (mostly Omega-3's) 114g carbohydrates

This recipe could really go anywhere... Peanut butter chocolate, Peanut butter banana, blueberry cheesecake, apple cinnamon, pumpkin, experiment.

What's the bakin h powder for?  Would still work without. Maybe a little more dense

It would be denser, but I like things that look big because it makes my inner fatass happy... Exactly why I eat vegetables now. But yes, you could get away without, as I did last batch, I might take it out entirely.

Sounds good from the ingredients.  I would add a fruit reduction topping + a little brown sugar and oats to get a crumble on top.

Try that, I might too. Was also thinking about peanut butter, banana and chocolate flavor too. Simply a jumping off point.

Any nut works, but walnuts have omega-3's which is why I put them in.

Don't almonds have omega 3s too? If I remember correctly, most nuts do.

Most have omega 9's omega 6's, or in the case of pecans and macadamia nuts, saturated fatty acids, most do not have omega 3's in exception for walnuts. Almonds have 62% omega 9, 24% omega 6, and 6% saturated fat. Still, a great fat profile, but not as great as walnuts. However, almonds have a crapload of vitamins and are less calorie dense than walnuts.

I'll have to grab some of those almonds that are sliced to put on my salads, that'd be good.
