    Hey everyone!  Been a long time since I've posted a recipe, and I felt like being creative again, so I'll be sharing tonight's experiment.

    Ingredients
    -3/4 cup whole wheat flour
    -3 scoops vanilla whey
    -30g shredded coconut (separated)
    -1 medium/large banana (~110g or so)
    -140g pureed/diced mango
    -1/2 cup unsweetened applesauce
    -1 tablespoon baking powder
    -1/2 teaspoon baking soda
    -1 tsp cinnamon
    -1/2 tsp salt
    -3/4 cup sweetener (or sugar)
    -1 whole egg
    -1 tsp vanilla extract

    Optional, but quite delicious sounding, would be to add some raisins and chopped nuts.

    Macro totals for this batch (with my ingredients) came out to 1130 calories/97g protein.  
    This will make ~12 muffins, so give or take, each one will be roughly 95 calories/8g protein.

    Directions

    As usual, start by preheating your oven to 350*.  Set half of your coconut aside.  Mix all your dry ingredients together and whisk to combine.  Add in all your wet ingredients and mix well!  I love baking recipes, so simple!  Oh, and spray your muffin tin with non-stick spray and fill them up about 2/3 of the way with the batter.  Top each muffin with a sprinkling of shredded coconut.

    Bake at 350* for 15-20 minutes, or until toothpick inserted in the center comes out clean.

    Haha, on the nose CG.  I ate them so fast that the camera battery couldn't charge in time =p

    On left: baked 21 minutes
    on right: baked 15 minutes

    15 minute version is better...
    I think these would be great with some kind of frosting. Quick, someone come up with a fruity healthy frosting of some sort!

    Well for frosting  there is the traditional

    1 Cup Greek yogurt (I used Stonyfield Farms)
    A good splash of vanilla extract (I used 1 t)
    1/2 C powered sugar, sifted

    or
    1 cup greek yogurt
    1 scoop protein powder

    or
    1 cup greek yogourt
    1/2 cup fruit preserves

    Or just get you favorite yogourt and dunk them in like a dip.  Wink
