Ingredients/Macros-1 cup non-fat cottage cheese = 160 calories/30g protein
-1 cup canned pumpkin (or pumpkin puree if you have access to whole pumpkin) = 40 calories/2g protein
-1 scoop vanilla whey = 120 calories/24g protein
-Sweetener/cinnamon/allspice/nutmeg/cloves (
*Pumpkin pie spice) to taste
Optional-Handful of walnuts = 200 calories/7g protein
-1 tablespoon milled flax seeds = 30 calories/1.5g protein
Macro totals come out to
320 calories/54g protein. Adjust accordingly if you add flax/walnuts (I highly recommend the flax! Gives it a delicious nutty flavor).
*You can find pumpkin pie spice already mixed together in the store.
DirectionsSimply chuck everything into the blender/food processor and blend until smooth! The texture will be nice and thick and creamy. Chill in the refrigerator for 15 minutes, top with some fat free whipped cream and enjoy!
