Did test it 10 minutes ago...
Used 1 egg and 140g of Tuna. Spiced with some pepper and Curry. Crusty outside, moist inside with about 10g of Low-Fat Mayonaise on the bread. Tasted delicious.

What I did:
First off, try not to make the patty too big. Keep it the size of your spatula then you shouldn't have any flip break issues.
I used the egg mix in a carton. The one that that has the yolks in it. I used 1/4 cup of that and one regular can of tuna. 145 calories.
I mixed it in a bowl with a fork until it was about as pure paste as I could get. BTW, try and drain ALL the water from the tuna. I think that would help during cooking.
I sprayed some Pam olive oil spray in the pan and let it cook. To be honest, I think you could cook these things for a good bit. Get em a nice brown color on one side and then flip it.
Mine was a bit more moist in the middle then I would have liked it to be. Next time I'll drain ALL the water and let it cook a little longer.
I dunno about anyone else but it was very good tasting. I used regular dijon mustard. A squirt of that stuff is like 10 calories.
Then a bun for 120 more calories. Not a bad little meal. It actually made two "burgers" but I just ate one patty without a bun. (small value brand burger buns)

Delicious
I also did a patty using quorn mince and a whole egg. Smel terrible when cooking, but tasted very good.
Added mixed herbs, bit of garlic, bit of chilli powder.
