I made these protein powder-based pancakes this morning, and the recipe turned out great! Id like to share the recipe for anyone else who is interested. The carbs are nonexistent as opposed to normal pancakes and the protein content is off the charts.
Ingredients: -2 scoops (60g) protein powder, preferably vanilla flavored, if not, you can add vanilla extract and a sweetener to taste (remember the flavor of the powder provides the sweetness) -1/2 cup egg whites (i used egg beaters, which equals 4 egg whites) -1/2- 1 teaspoon baking powder -1 teaspoon - 1/2 tablespoon cocoa powder (i used hershey's dutch special dark) i give a range of quantity pertaining to people's taste, the more the chocolate, the richer the taste - a little bit of milk or almond milk to adjust thickness of pancakes (i used unsweetened almond milk 30 cals per cup) - cooking spray - nonstick skillet - cinnamon, fruit of choice (optional) Makes 6 4'' pancakes or less according to how much you put per go.
Directions: Spray the bottom of an unheated skillet with the cooking spray, set the heat to medium or medium low. Measure out the egg whites and combine all the dry ingredients, whisk with tool of preference and it should give a thick consistency - the ratio of egg white to powder should be correct. Make sure the cocoa powder is mixed in well, giving the batter a nice chocolate color. When the skillet is heated (flick some water on the surface, and it should sizzle a little) you are ready to go. Make your first pancake by pouring the mixture in the center, make the size how you want it. If you find that it is too thick, add the milk or almond milk to the batter, mix, and the pancakes should come out runnier and bigger (they will be easier to break though). The pancake will be ready to flip when you see bubbles rise to the surface and the edge seems to have toughened; flip and cook the other side for a minute. Repeat to the end of the mixture. Eat them the way you want them; I used sugar-free blueberry preserves, banana, and topped off with a good amount of cinnamon. You can also add sugar-free syrup if you have it- its a rather guiltless way to make these pancakes great. They may a little on the dry side, but the addition of fruit or if you added milk fixes that problem. In my opinion, they turned out better than the real thing because they were so thick - the cocoa powder/ vanilla does wonders for the flavor
Nutritional info: 2 scoops protein ~ 46 g protein 240 cals 1/2 cup egg whites ~ 12 g protein 60 cals 1-5 cals by cocoa powder + miscallaneous minimal contributions by condiments/ flavoring so you are starting off with 300 calories and 58 g of protein as a base, round off to 350 calories to compensate for adding milk and cocoa. Thats a pretty good breakfast if i have to say so myself. Eat with your fruit of choice and maybe top it off with some fiber one cereal to add fiber, and you are looking at a great meal that would max out at 500 cals. - and a whole lot of protein

i tryed this and i failed miserably aha looked good w/o milk then once done it was dryer then could be aha and i didnt have any syrup so i failed. going to try again in the future should be rather delicious

I actually think I might have to try these (making me hungry even though I just ate lol). I have chocolate powder, so I'll just spike it with a little cocoa and let you know how it goes.

I thought our bodies could only absorb 40g of protein at a time, or is this not true?
Also, how big should the pancake be to have that 300 calories and 58g protein roughly?

you can proportionally decrease the ingredients to fit your needs, but most people *here* dont mind having the extra protein. If your body cant "absorb" the extra protein, the calories are still low. As for the size, it is up to you. I dont make one big pancake, I made as many 4-5'' diameter pancakes as the batter gave me

another addition to add to my to try recipe list. thanks for sharing! pancakes and waffles uses the same ingredients right? just that waffles are toasted =3 i like to each my pancakes and waffles plain mixed with blueberries (yum) i eat them like finger food. if that's so i think i'll pop that in a waffle maker.

some waffles take oil and eggs  but its worth it if u ask me.
