I just finished eating this it is super good, here is what you will need.
      Ingredients
3 whole eggs
A couple table spoons of milk
Medium salsa use to taste (I used wholly salsa brand)
Green bell pepper and or other sweet tasting pepper again use to your taste
Mushrooms to taste
Spinach to taste
            Cooking instructions

1. Heat the salsa until all of the moisture is evaporated *note this took me a while over 5 mins)
2. Chop up pepper finely as the salsa is cooking
3. Add crumbled mushrooms and diced pepper into the pan first then immediately add the egg and spinach on top of the egg cover your pan and wait for the eggs to cook.

WOW! I like the idea of adding milk to the eggs! It's another source of protein! I might be able to save money on eggs that way! I could even use whole milk since it's being mixed in with the eggs and it's breakfast. I've been making egg whites and salsa for a long time and I don't even bother waiting for the juice to evaporate from the salsa. I just beat the eggs and salsa together at the same time and it's not as funny as you'd think. It taste GOOOOD GOOOD GOOOOOD!!
