casein protein contains, some enzyme that make protein slow digesting, my question is, do this enzymes make fast digesting carbs slow to digest turning it into a slow digesting carb?

    Aside from a couple of prescription medications (alpha-glucosidase blockers sometimes used by diabetics), I don't know of anything that slows the digestion of carbohydrates.

    [That isn't due to lack of looking into it, if it was possible - it would be very useful to me.]
